Tête de Moine is one of those cheeses that sounds royal, but it unironically just means “monk’s head”. Hailing from the Jura Mountains in Switzerland, this semi-soft cow’s milk cheese is rich, creamy, and just a little tangy—everything you want in a great cheese. The real fun comes in how it’s served. Tête de Moine is traditionally shaved into delicate rosettes using a special tool called a Girolle, which brings out its full flavor and texture in the best possible way.
